Tomato basil pasta

Ingredients:

  • 8 oz (about 225g) organic pasta of your choice (such as spaghetti, penne, or fusilli)
  • 2 tablespoons organic extra virgin olive oil
  • 4 cloves organic garlic, minced
  • 1 can (14 oz) organic diced tomatoes
  • 1/4 cup organic tomato paste
  • 1 teaspoon organic dried oregano
  • 1/2 teaspoon organic dried basil
  • Salt and pepper to taste
  • Organic fresh basil leaves, chopped (for garnish)
  • Grated organic Parmesan cheese (optional, for serving)

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta cooking water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced tomatoes (with their juices) and tomato paste to the skillet. Stir well to combine.
  4. Stir in the dried oregano, dried basil, salt, and pepper. Allow the sauce to simmer for about 10-15 minutes, stirring occasionally, until it thickens slightly.
  5. If the sauce becomes too thick, you can add a bit of the reserved pasta cooking water to reach your desired consistency.
  6. Once the sauce is ready, add the cooked pasta to the skillet. Toss the pasta gently with the sauce until well coated.
  7. Taste and adjust the seasoning if needed.
  8. Serve the organic tomato basil pasta hot, garnished with freshly chopped basil leaves and grated Parmesan cheese, if desired.
