Lemon Herb Roasted Chicken

Ingredients:

  • 1 whole organic chicken (about 4-5 pounds)
  • 2 organic lemons
  • 4 cloves of organic garlic, minced
  • 2 tablespoons of fresh organic rosemary, chopped
  • 2 tablespoons of fresh organic thyme, chopped
  • 2 tablespoons of fresh organic parsley, chopped
  • 4 tablespoons of extra virgin olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the organic chicken inside and out with cold water, then pat it dry with paper towels.
  3. Zest one of the lemons and set the zest aside. Cut both lemons in half.
  4. In a small bowl, mix together the minced garlic, chopped rosemary, thyme, parsley, lemon zest, and olive oil to create a herb marinade.
  5. Rub the herb marinade all over the chicken, including under the skin and inside the cavity. Season generously with salt and pepper.
  6. Place the lemon halves inside the chicken cavity.
  7. Tie the legs together with kitchen twine and tuck the wing tips under the body of the chicken.
  8. Place the chicken in a roasting pan breast-side up and roast in the preheated oven for about 1 hour and 30 minutes to 1 hour and 45 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
  9. Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
  10. Carve the chicken and serve with your favourite side dishes.
