Organic Quinoa Salad

Ingredients:

  • 1 cup organic quinoa
  • 2 cups water or vegetable broth
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions:

  1. Rinse the quinoa under cold water in a fine-mesh sieve to remove any bitterness.
  2. In a medium saucepan, bring the water or vegetable broth to a boil. Add the quinoa and reduce heat to low. Cover and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff the quinoa with a fork and let it cool to room temperature.
  3. In a large bowl, combine the cooked quinoa, diced bell pepper, cucumber, red onion, parsley, and cilantro.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the quinoa salad and toss to coat evenly.
  5. Taste and adjust seasoning if necessary.
  6. Serve immediately or chill in the refrigerator for at least 30 minutes to allow the flavors to meld together before serving.
